Hi, I'm Elissa, a professionally trained chef with over 25 years of experience working in the food industry. While working at a job where my responsibilities included making breads, cakes, pies, pastries & confections, I was diagnosed with celiac disease. At that time I had no idea gluten could be an issue for anyone, I mean everyone eats bread! And the scientific properties that gluten possesses are the very foundation of the education taught in cooking schools. I thought my career was over but went back to square one and dove into research on the world of gluten free cooking. I redeveloped those recipes that had been a part of my life for years and created new ones with my new training. With that new education, jobs that needed a chef with gluten free experience came my way. Over the years I've expanded this education to include many dietary restrictions since so many of us have issues with multiple foods. Helping others see their restrictions in a new way is what I do. By closing the door on one ingredient, you can open the door on ingredients that you may not be familiar with to create an exciting new world of food! I now feel grateful to have been given the opportunity to think of the food world in a different light. The food issues that I have are not negative, they have made me UNRESTRICTED!
